Before you start
Zest the oranges before cutting them and avoid the bitter white pith. Give the possets the full chill time so they set properly; edible flowers or a little lavender make a lovely topping.
Vegan Orange Posset
About 8 orange cups · chill 6 hours
Ingredients
Step by step
- Zest the oranges, then halve them, scoop out the flesh and squeeze the juice. Keep the empty halves as cups.
- In a pan over medium heat, whisk the coconut milk, orange juice, zest, maple syrup, vanilla and salt.
- When it starts to bubble, whisk in the cornstarch to avoid lumps and cook 2–3 more minutes until thickened.
- Pour into the orange halves and refrigerate about 6 hours, until set.
