Pumpkin-Shaped Peanut Butter Cups

Chocolate shells filled with maple-sweetened peanut butter. Pumpkin-shaped, without pumpkin in the filling.

Use a silicone pumpkin mould and dairy-free chocolate. Contains peanuts. The shape comes from the mould.

About 7 cups · freeze about 30 minutes

1 cup runny natural peanut butter; ⅓ cup maple syrup; 2 tbsp coconut flour1 cup vegan chocolate, melted; optional 1 tsp coconut oil

Coat the mould cavities with half the melted chocolate. Refrigerate until set.
Mix peanut butter, syrup and coconut flour. Wait 1 minute to thicken.
Press roughly 2 tbsp filling into each shell and cover with remaining chocolate.
Freeze about 30 minutes until firm, then gently unmould.
